METRIC MEASUREMENTS

HERITAGE TOMATO & BABY MOZZARELLA

80g mixed leaf

80g mini mozzarella balls

50g heritage tomatoes

50g chickpeas

35g roasted red peppers

30ml honey & mustard dressing

20g sliced red onions

2g micro greens

5g spring onion

3 sliced of ciabatta toast

Drain mozzarella in advance otherwise it will be too watery.

Toast ciabatta on the hot plate. Mix all ingredients in a bowl with dressing. Build in a salad bowl making sure to build upwards to give the dish height. Top with spring micro green and finish with ciabatta.

100g rocket

250g mixed leaf

Combine.

2 Cups spring mix

3 oz. mini mozzarella balls

2 oz.  heritage tomatoes

2 oz. Harissa chickpeas

1 oz. sliced roasted red bell peppers

½ oz. sliced red onion

1 TBL green onion

1 pinch micro greens

1 slice toasted sourdough

1.5 oz. ramekin dressing of choice

Drain mozzarella in advance otherwise it will be too watery.

Mix all ingredients in a bowl.

Build in a salad bowl making sure to build upwards to give the dish height.

Top with spring micro green and finish with sourdough
