ITALLIAN MEDALLION

1x sourdough pizza base
60g pizza sauce
62.5g buffalo mozzarella (this is ½ of one ball)
60g nduja sausage

Garnish:
10g basil leaves
5ml oil


Stretch out your pizza base as normal. Top with sauce, and cheese – tear the
buffalo mozzarella into 10 small pieces and spread evenly across the base -
and add nduja.
When the pizza is cooked, remove from the oven and garnish with oil, and 5g
basil (around 5 large basil leaves), roughly torn in your hands and spread
across the pizza.
