POP-UP PECORINO
1 x sourdough pizza base
60g pizza sauce
40g spinach
40g wild mushrooms
1x egg
Garnish:
5ml oil
25g white truffle pecorino
Stretch out your pizza base as normal. Top with sauce, then add spinach and mushrooms in a ring, leaving a gap in the centre of the pizza for the egg. Crack the egg in the middle and cook as normal. When the pizza is cooked remove from the oven and garnish with oil. Just before serving, using your microplane finely grate 25g white truffle pecorino across the top of the pizza.
