UK CLEAVER SMASHED CUCUMBERS
500g Smashed Cucumber
30g Chopped Spring Onion
3 cloves thinly slice garlic
20g Thinly Sliced Chilli
10g Roughly Chopped Coriander
20ml Korean Sauce
PER SERVING: 65g Cleaver smashed cucumbers - 5g Spring onion
Place cucumber mix into a side dish, making sure to have some of the chilli and coriander at the top. Top with spring onion. Serve as shown.
KOREAN BBQ SAUCE
5g garlic
25 ginger
250g white sugar
200ml soy sauce
1L water
1kg Gochujang paste
Combine all ingredients in a large pan, and simmer for 10 minutes. After 10 minutes strain the garlic and ginger.

12 Cucumbers “cleaver smashed”
2 Cups Chopped Green Onion
1 Cup garlic, thinly sliced
12 Fresno peppers, thinly sliced
1 Cup chopped cilantro
2 Cups Korean BBQ Sauce
PER SERVING: 2.5 oz. Cleaver smashed cucumbers – 1 TBL green onion
Place cucumber mix into a side dish, making sure to have some of the Fresno pepper and cilantro at the top. Top with green onion.

2 oz. rough chopped garlic
2 oz. rough chopped ginger
2 cups white sugar
2 cups soy sauce
2 quarts water
2 lb. Gochujang paste
Combine all ingredients in a large pan, and simmer for 20 minutes, then strain the garlic and ginger. Cool & store.
