HOUSE PICKLES
1 case English Cucumbers (12 LBS)
1 gallon Cider Vinegar
8 each Bay Leaves
½ cup Mustard Seeds
2 TBL Fennel Seed
2 TBL Red Pepper Flake
2 quart Sugar, Granulated
2 cup Kosher Salt
1 gallon Ice
Using a mandolin, cut the English cucumbers ¼ inch thick. In a large enough pot combine the cider vinegar, bay leaves, mustard seeds, fennel seed, red pepper flake, sugar and salt. Bring the liquid to a simmer until the sugar is completely dissolved.
In a large enough container place the sliced cucumbers and pour the hot liquid over top. Be sure to pour the liquid through a strainer. Once the hot liquid is in the container with the cucumbers, add the ice and stir gently.
