PICKLED RED ONIONS PREP
10 LBS Red Onion, Julienne
3 quarts Cider Vinegar
6 cup Sugar, Granulated
6 TBL Mustard Seeds
3 each Bay Leaves
3 TBL Kosher Salt
3 TBL Black Peppercorn, Whole
3 quarts Water

In a pot large enough combine the cider vinegar, sugar, mustard seeds, bay leaves, kosher salt, black pepper and water.
Bring to a boil over medium heat and continue to cook until the sugar has dissolved.
Place the sliced onions into a container.
Strain the hot pickling liquid into the onion container.
