PICKLED RED ONIONS PREP

10 LBS Red Onion, Julienne​

3 quarts Cider Vinegar​

6 cup Sugar, Granulated​

6 TBL Mustard Seeds​

3 each Bay Leaves​

3 TBL Kosher Salt​

3 TBL Black Peppercorn, Whole​

3 quarts Water

In a pot large enough combine the cider vinegar, sugar, mustard seeds, bay leaves, kosher salt, black pepper and water.​

Bring to a boil over medium heat and continue to cook until the sugar has dissolved.​

Place the sliced onions into a container.​

Strain the hot pickling liquid into the onion container.
